Jesse Blake

Jesse Blake is a highly acclaimed chef known for his successful restaurants in Perth, Australia and Dubai. He has received a number of accolades for his commitment to sustainability and locally grown produce, including being recognized as a Michelin-starred chef. Jesse has also worked as a culinary consultant and is currently the Executive Chef at LOWE, a highly regarded sustainable restaurant in the Middle East that has been recognized by Michelin. In addition to his work at LOWE, Jesse has started a pop-up restaurant called Eye Heart Rabbit and has helmed the curation of Akina, a contemporary Japanese restaurant where he will blend innovation and tradition in his cooking.

Specialities

Marinated Lamb chops
Korean spices, sesame cucumber

Fatty lamb chops marinated in a bulgogi style Korean pepper sauce and grilled medium. Dusted in pepper flakes and served with a sesame cucumber kimchi pickle.

Crispy Shitake Salad
Enoki, Arugula, Yuzu Truffle Vinaigrette

A salad of crisp Shiitake, pickled shiitakes, raw enoki mushrooms, chopped arugula, spring onions and tossed in a yuzu truffle dressing. Garnished with tempura crisps, toasted sesame.

Seared Samlon Belly Taco
Wasabi Mayo, Mango Salsa

A fried nori taco filled with sushi rice, torched diced salmon belly dressed in yuzu ponzu, wasabi mayo and an aji Amarillo chile and mango salsa. Garnished with sliced green onion.
